Tasty Cornish greens - serves 4

To serve with a meat or chicken dish.

6 spring onions, washed and chopped
4 rashers of streaky bacon, chopped into small pieces
400 gm spring greens, washed and shredded
30gm butter
1 tablespoon rapeseed oil

First wash your hands.
Put the butter and oil in large frying pan and heat.
Add the bacon and spring onions.
Stir them around until the bacon is cooked.
Toss shredded spring greens into the pan.
Stir until greens are just tender and shiny.
Season with salt and black pepper.
Serve at once.
