Crunchy cauliflower cheese

1 large cauliflower
25g fresh breadcrumbs
150g Davidstow cheddar cheese
25g Butter
25g plain flour
1 pint milk
Salt and freshly milled pepper

Ask a grown-up to help you and wash your hands.
Break up the cauliflower into smallish pieces (florets) and rinse.
Cook in boiling salted water for 5 minutes until just softened.
Strain and place in bottom of ovenproof dish.

Melt butter, add flour, and cook stirring for 1 minute.
Remove from heat and add milk a little at a time.
Return to heat and simmer until sauce begins to thicken.
Remove from heat again and add most of the grated cheese, stirring in well.
Season with salt and pepper.

Pour over cauliflower and sprinkle with remaining grated cheese and thick layer of breadcrumbs.
Place in middle of oven and cook for 30 minutes, until lightly browning on top.
